Cranberry Oat Biscotti

These Cranberry Oat Biscotti are the perfect Christmas cookie: crisp and golden, with tart cranberries and hearty oats that bring a rustic charm to your holiday table. Whether you’re serving them alongside a steaming mug of cocoa, gifting them in a pretty tin, or enjoying them with your morning coffee as you unwrap presents, they’re a delightful way to celebrate the season.

  • granulated sugar

  • all-purpose flour
  • baking powder
  • old fashioned oats
  • dried cranberries

How to Make Cranberry Oat Biscotti

Preheat oven to 375 degrees and line a sheet pan with parchment.

In a large bowl, cream together the softened butter and granulated sugar with an electric hand mixer. Beat in the eggs one at a time and then mix in the vanilla extract. Next, mix in the all-purpose flour, old fashioned oats and baking powder. The batter will be stiff. Stir in the dried cranberries by hand.

Divide the batter into four and shape into 4x3x1 logs. Place the logs onto the parchment lined sheet pan. Leave enough space for the logs to expand, about 2 inches.

Bake for 20 minutes. Remove from oven and cool for 30 minutes.

Using a serrated knife, slice the logs diagonally into one inch slices. You should get about 15 slices per log. Return the sliced cookies to the parchment lined sheet pan laying the pieces on one side. Bake at 375 for 10 minutes then flip to the other side. Bake for another 10 minutes.

Cool and store in an airtight container.

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup salted butter, softened (1 stick)
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 cup old fashioned oats
  • 1 1/2 cups dried cranberries

Instructions

  1. Preheat oven to 375 degrees and line a sheet pan with parchment.
  2. In a large bowl, beat together the butter and granulated sugar with an electric hand mixer until smooth.
  3. Beat in the eggs, one at a time, and then the vanilla extract.
  4. Lastly, beat in the dry ingredients, all-purpose flour, baking powder, and old fashioned oats.
  5. Stir in the dried cranberries by hand.
  6. Split the dough in four and shape into rectangular logs, approx. 4x3x1 in size, and place on a parchment lined sheet pan.
  7. Bake for 20 minutes.
  8. Remove from oven and cool for about 30 minutes.
  9. Using a serrated knife, slice the logs into 1/2 inch slices diagonally .
  10. Arrange all the slices on the baking sheet on their sides.
  11. Bake at 375 for 10 minutes then flip to other side, bake another 10 minutes.
  12. Let cool completely and store in an airtight container.
