This Baked Caprese is perfect for pizza lovers that want to stay away from carbs! The tomatoes, basil and warm gooey mozzarella are the perfect combination! It’s the perfect side for grilled chicken or steak or even as an appetizer!
This recipe is for the Caprese Salad lover that wants to take it up a notch! I actually prefer my tomatoes cooked, baked, sautéed versus raw.
Preheat the oven to 350 degrees and lightly grease a 9 x 13 baking dish. Slice the tomatoes. If you can’t find yellow or orange tomatoes, red will do just fine. I just like what mixing the colors brings to the dish.
Now begin layering the tomato, mozzarella and basil in the dish, alternating the tomatoes. I used pre-sliced mozzarella which made it very easy to assemble and get the perfect slice of mozzarella every time.
When you are done, your dish should look like this below. So colorful! Drizzle with the olive oil and balsamic vinegar. If you wish, you can stop here and just serve the salad. But I say keep going, you won’t regret it!
Lastly, sprinkle the top with the Italian Breadcrumbs.
Baked for 30 minutes or until bubbly. Then flip you oven to broil for 2 – 3 minutes just to brown the top a little.
So cheesy! Everyone will love this Baked Caprese! Serve immediately!
Enjoy!
