This Salmon with Tomato, Olive and Caper Sauce is absolutely delicious! Inspired by travels to Italy, this meal can be made in one skillet and ready in less than 30 minutes!

Ingredients For Salmon With Tomato, Olive and Caper Sauce

  • salmon fillets
  • olive oil
  • sea salt
  • black pepper
  • grape or cherry tomatoes
  • kalamata olives
  • capers
  • white wine (such as pinot grigio)

How To Make Salmon with Tomato, Olive and Caper Sauce

This recipe is so easy and so full of flavor!

Heat your favorite skillet over medium-high heat. Add only a teaspoon or two of olive oil. Olive oil tends to smoke a little so don’t use too much. Place salmon filets in skillet skin side down.

Cook until the pink comes up about 3/4 of the way up the filet about 6 – 7 minutes. Then flip and cook another 2 – 3 minutes.

Transfer salmon to plate and let rest while you prepare the sauce.

Using the same pan, add in tomatoes, olives and capers over medium heat.

Stir and cook for 2 – 3 minutes, then add 1/4 cup of white wine. Cook sauce for another 5 – 8 minutes until tomatoes blister.

Pour sauce over the salmon and serve! So easy and so tasty!

Salmon with Tomatoes, Olives and Capers

Ingredients

Scale
  • 2 salmon fillets
  • 1 – 2 tsp olive oil
  • pinch of sea salt
  • pinch of black pepper

Sauce

  • 1 pint grape or cherry tomatoes
  • 1/2 cup kalamata olives
  • 3 tsp capers
  • 1/4 cup white wine (such as pinot grigio)

Instructions

  1. Heat large skillet over medium-high heat.
  2. Add 1 to 2 tsp of olive oil.
  3. Add salmon skin side down.
  4. Cook salmon until pink comes up about 3/4 way the filet, about 6 – 7 minutes.
  5. Carefully flip salmon and cook another 2 – 3 minutes.
  6. Transfer salmon to plate to rest.
  7. In same skillet, add tomatoes, olives and capers.
  8. Stirring, cook for 2 – 3 minutes and then add white wine.
  9. Cook for another 5 – 8 minutes, until tomatoes blister.
  10. Pour sauce over salmon and serve.
  11. Enjoy!
