Guinness Beef Stew

This Guinness Beef Stew is rich, hearty and perfect for cold nights! Chunks of beef with honey gold potatoes, carrots, pearl onions and peas all in a Guinness beer gravy! This stew won’t leave you hungry!

Guinness Beef Stew

Ingredients Needed for Guinness Beef Stew

  • olive oil
  • stew beef
  • garlic cloves
  • garlic powder
  • medium carrots
  • honey gold potatoes or large potato
  • pearl onions
  • all-purpose flour
  • bottle of GuinnessĀ 
  • beef broth or beef stock
  • bay leaf
  • dried thyme
  • Worcestershire sauce
  • frozen sweet peasĀ 
  • sea salt
  • black pepper

How To Make Guinness Beef Stew

Perfect for St. Patrick’s Day or any day, this Guinness Beef Stew may look complicated but it’s super easy to make. I suggest prepping your vegetables before you even get started. Also, if you stew beef isn’t cut into bite sized chunks, I suggest using some kitchen shears to cut them before adding them to the pot.

Ok, all prepped? Now you are ready to get started! So, using a dutch oven or a large pot with a lid, heat the olive oil over medium heat. Add in the minced garlic, stew beef and garlic powder. Cook until the beef is almost cooked through, about 5 minutes.

Add in chopped carrots, potatoes and pearl onions and stir. Then sprinkle the flour and stir to coat. Pour in the Guinness and stir to loosen all the tasty bits on the bottom of the pan.

Now, add the beef broth, bay leaf, thyme and Worcestershire sauce. Bring to boil and reduce to a low boil/simmer. Cover with the lid and cook for 2 hours.

In the last 15 minutes, add in the frozen sweet peas. Don’t worry they will cook really fast. I add them at the end because nothing is worse than mushy peas!

Serve with a crusty beard or this Cheddar and Bacon Irish Soda Bread.

Ingredients

  • 1 tbsp olive oil
  • 1 lb. stew beef, cut in chunks
  • 3 garlic cloves, minced
  • 1/2 tsp garlic powder
  • 4 medium carrots, sliced
  • 6 honey gold potatoes or 1 large potato, cut in chunks
  • 6 pearl onions, peeled
  • 1 tbsp all-purpose flour
  • 11.2 oz bottle of guinness
  • 2 cups beef broth or beef stock
  • 1 bay leaf
  • 1 tsp dried thyme
  • 2 tsp worcestershire sauce
  • 9 oz frozen sweet peas
  • sea salt to taste
  • black pepper to taste

Instructions

  1. In a dutch oven or large pot, heat olive oil over medium heat.
  2. Add garlic and stew beef chunks. Cook until beef is almost cook through.
  3. Add carrots, onions and potatoes and stir.
  4. Sprinkle with flour, stir to coat thoroughly.
  5. Add Guinness and stir, scrapping the bottom to get all the good bits.
  6. Add in beef broth, bay leaf, thyme and worcestershire sauce.
  7. Bring to a boil and turn to a low boil/simmer.
  8. Cover with a lid and cook for 2 hours.
  9. In last 15 minutes, add the frozen sweet peas.
  10. Cook until peas are done.
  11. Serve immediately!
  12. Enjoy!
