Slow Cooker Pot Roast is the perfect dinner for busy weekends or weekdays! Prep, place in slow cooker and voila! Just add a side of greens and dinner is served!

- olive oil
- carrots
- baby potatoes or large potato
- garlic cloves
- pearl onions or small yellow onion
- water
- beef bouillon cubes
- garlic powder
- sea salt
- black pepper

How To Make Slow Cooker Pot Roast
So, I used a chuck roast for this recipe. It has a little extra fat on it so it makes for a very flavorful roast.
I have a slow cooker that can move from counter to stove and back. I love it! But if you don’t, that’s ok. Start with heating olive oil in a large skillet over medium-high heat. Season one side of the roast with salt, pepper and garlic powder. Place seasoned side down in the skillet.
Let that brown for a couple of minutes and while you are waiting season the other side of the roast. Once it’s browned, flip to the other side and brown.
Then transfer the roast to your slow cooker and surround it with the carrots, onions, potatoes and garlic.
Add two bouillon cubes and about one cup of water. You might need to add a little more water so that the sides are covered but the top is not. It really depends on the size of the roast you are cooking. The roast in these pictures was 2 pounds.
Set your slow cooker depending on your timeframe. For instance, if you are setting this in the morning before work, then set it on low. If you are getting this ready late in the day, then set it on high. My high setting is four hours and my low is eight hours. So, use your best judgement. With either timeframe, your roast will turn out delicious!

Ingredients
- 2–3 lb. beef pot roast or chuck roast
- 1 tbsp olive oil
- 3 carrots, cut into chunks
- 8 baby potatoes or one large potato, cut into chunks
- 3 garlic cloves
- 6–7 pearl onions or one small yellow onion
- 1 1/2 cups water
- 2 beef bouillon cubes
- 1/2 tsp garlic powder
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Season one side of the roast with salt, pepper and garlic powder.
- Place in skillet seasoned side down and then season the other side.
- Cook for 2 -3 minutes, until it’s seared and then flip to other side.
- When the roast is seared on both sides, transfer to the slow cooker.
- Add the carrots, potatoes, onions and garlic with the bouillon cubes.
- Pour in 1 to 1 1/2 cups of water depending on the size of the roast. It should be enough water to come up the sides of the roast but not covering.
- Set your slow cooker to the high or low setting depending on how much time you have to cook the roast. Both times turn out great!
- Transfer roast to platter with veggies and serve!
