How To Make Easy Spicy Chicken Alfredo
This recipe can be ready in 30 minutes if you use you time wisely! It’s definitely the easiest chicken alfredo you will ever make! You will need two large skillets and one with a lid, or a large saucepan with a lid. To start, let’s prep the chicken.
Place chicken breasts on a piece of parchment, sprinkle each side with 1 tsp of old bay seasoning and 1/2 tsp of garlic powder. If you would like to add a little more heat, sprinkle each piece of chicken with some cayenne pepper. Cover chicken with another piece of parchment, pound with a meat tenderizer or rolling pin until both pieces are the same thickness. The idea is to make the chicken thinner but more importantly, to make each breast the same thickness so it cooks evenly.
In a large skillet, heat 1/2 tbsp of olive oil over medium heat. Cook chicken 5 or 6 minutes a side, until not pink at the thickest point. Depending on your stove, you may need to lower the temperature if the chicken starts to burn.
While the chicken is cooking, heat another large skillet or saucepan over medium heat. Add the chicken stock, alfredo sauce, Italian seasoning and garlic powder to the pan.
Bring to a low boil over medium heat and add the fresh pasta, and break apart if needed. You may also use your favorite dried pasta if you don’t have the refrigerated pasta on hand. Reduce temperature to low or simmer and cover pan with a lid for about 5 minutes or until pasta is done (Cook for 12 minutes if using dried pasta).
Once pasta is cooked, remove from heat, stir in the shredded mozzarella. Serve immediately topped with sliced chicken.
