How To Make Whipped Shortbread Cookies
Preheat oven to 350 and line a sheet pan with parchment. In a large mixing bowl, beat butter, confectioners sugar and cornstarch with a hand mixer until creamy.
Next, beat in all-purpose flour. Then add milk one tablespoon at a time and beat until dough comes together. If the dough isn’t coming together, add another tablespoon of milk. The dough will be thick.
If using food coloring, add it now and mix well. If making multiple colors, split dough and place in different bowls, then add the food coloring.
Using a small cookie scoop or teaspoon, measure out dough, roll into balls and place on parchment lined sheet pan. Leaving about 2 inches between cookies.
Using a fork, lightly press on each rolled ball and top with sprinkles, if desired. Bake for 7 minutes, cool on wire rack.
Continue rolling and pressing remaining dough. Store cookies in an airtight container.
Hope you enjoy!
