Ingredients

- 4 small avocados, peeled and sliced
- 8 egg roll wrappers
- 2 tbsp olive oil
- water
- cooking spray
- sweet chili sauce (or sauce of choice for dipping)
Instructions
- Layout one egg roll wrapper and place 4 or 5 slices of avocado in the middle.
- Fold the bottom of the wrapper over the avocado and then fold in the sides.
- Brush a little water on the top edge of the wrapper, then finish rolling the top over to seal the edges.
- Continue rolling with remaining wrappers and avocado.
- Preheat air fryer to 350 degrees.
- Using a pastry brush, brush both sides of the egg roll with olive oil.
- Once air fryer has preheated, place egg rolls in basket. You may have to do these in batches depending on size of your air fryer basket.
- Cook for 8 mins, carefully flipping at 4 minutes using kitchen tongs.
- If cooking in batches, you can keep the egg rolls warm on a sheet pan in a 200 degree oven.
- Serve with sweet chili sauce for dipping.

Notes
- If using small avocados, use one half of an avocado per egg roll wrapper
- I serve with sweet chili sauce, but you can also serve with soy sauce or yum yum sauce.
- These egg rolls can be refrigerated and reheated later in oven or toaster oven.
