Bacon and Kale Cauliflower Gnocchi

Bacon and Kale Cauliflower Gnocchi is one of the tastiest and most flavorful dishes that I have accidentally stumbled upon! It’s only three ingredients, well, four if you garnish with parmesan cheese!

  • cauliflower gnocchi
  • kale
  • bacon slices,
  • grated parmesan

How To Make Bacon and Kale Cauliflower Gnocchi

Need a quick meal?? This dinner is for you! Let me show you!

Heat a deep skillet over medium heat and add the chopped bacon. Chop the bacon into bite size pieces and not necessarily into bacon bit size pieces!

Cook the bacon for about 5 minutes and then add the frozen cauliflower gnocchi into the skillet. No need to defrost the gnocchi. Also, traditional frozen gnocchi will work here too!

Cook the bacon and gnocchi for about 15 minutes, stirring occasionally so the gnocchi do not stick to each other. The gnocchi will start to brown, which is good!

After about 15 minutes, the gnocchi should be cooked or almost cooked, then add in the kale. Cook for another 10 minutes.

If desired, garnish with some grated parmesan cheese. Serve immediately!

Ingredients

  • 12 oz cauliflower gnocchi, frozen
  • 2 cups kale, chopped
  • 6 bacon slices, chopped
  • grated parmesan for garnish

Instructions

  1. In a deep skillet, cook chopped bacon over medium heat.
  2. Cook bacon for about 5 minutes and add frozen gnocchi.
  3. Cook bacon and gnocchi for 15 minutes, stirring occasionally.
  4. Add kale and cook for another 10 minutes.
  5. Serve immediately and garnish with grated parmesan if desired.
  6. Enjoy!
