Bacon and Kale Cauliflower Gnocchi

  • 12 oz cauliflower gnocchi, frozen
  • 2 cups kale, chopped
  • 6 bacon slices, chopped
  • grated parmesan for garnish

Instructions

  1. In a deep skillet, cook chopped bacon over medium heat.
  2. Cook bacon for about 5 minutes and add frozen gnocchi.
  3. Cook bacon and gnocchi for 15 minutes, stirring occasionally.
  4. Add kale and cook for another 10 minutes.
  5. Serve immediately and garnish with grated parmesan if desired.
