These Baked Cranberry Oatmeal Muffins make the perfect breakfast meal prep! Great when you need something quick, easy and healthy in the morning! Just bake, freeze and reheat when ready to eat!

How To Make Baked Cranberry Oatmeal Muffins
This has to be one of the easiest breakfasts plus it’s high in fiber and protein! Preheat your oven to 350 and lightly grease a 12 count muffin tin with cooking spray.
In a large bowl, mix the old fashioned oats, dark brown sugar, ground cinnamon, baking powder, ground flax seed and chia seeds. Making sure all the ingredients are well distributed.
Next, add in the unsweetened almond milk and vanilla extract and stir until well combined. You can use any milk you like as a substitute for the almond milk. I do suggested using unsweetened nut milks, if not the muffins may be too sweet.
Lastly, fold in the dried cranberries. Evenly distribute the oatmeal mixture into the greased muffin tin. I use a cookie scoop to get each tin as even as possible. Bake for 30 minutes.
Enjoy hot or cold! Makes great meal prep too just cool and store in the freezer in an airtight container. When ready to eat, just pop in the microwave! So easy!
