This Beef Enchilada Dip is hot and cheesy with just the right amount of spice! Layered with ground beef, black beans and cream cheese, it’s perfect for a party or tailgate! Serve with pretzel chips, tortilla chips or veggies!

- lean ground beef
- chopped yellow onion
- enchilada sauce
- black beans
- cream cheese
- diced green chilis
- shredded mexican blend cheese
- cooking spray

How To Make Beef Enchilada Dip
Pre-heat oven 350 degrees and lightly grease a 2 quart baking dish.
In a skillet, cook the ground beef and chopped onion over medium heat until cooked through. Then stir in the enchilada sauce, bring to a low boil and let simmer for about 5 minutes until mixture thickens.
Heat a small saucepan over medium heat, add cream cheese and diced green chilis. Stir continuously until cream cheese melts and sauce is smooth.
Now layer the dip in the baking dish. Add the ground beef mixture to the greased dish and top with the drained black beans. Then add the cream cheese mixture and spread evenly to the edges, or as close to the edges as you can get. Lastly top with shredded mexican blend cheese or a cheddar jack.
Bake for 25 – 30 minutes or until bubbly. Note, you can prep ahead of time and bake when ready. You can also bake ahead of time and reheat in the microwave when ready to serve.

- 10 oz enchilada sauce
- 15.5 oz black beans, drained
- 8 oz cream cheese
- 4.5 oz diced green chilis
- 8 oz shredded mexican blend cheese
- cooking spray
Instructions
- Preheat oven to 350 and lightly grease a 2 quart baking dish with cooking spray.
- In a medium skillet, brown ground beef with the chopped onion over medium heat.
- Meanwhile, in a small saucepan, heat the cream cheese and diced green chilis until the cream cheese is melted and smooth.
- Once ground beef is cooked, stir in the enchilada sauce and simmer for about 5 minutes.
- Place cooked ground beef mixture in the greased baking dish.
- Top with black beans.
- Then spread the cream cheese mixture on top of the black beans.
- Completely cover the top with the shredded cheese.
- Bake for 25 – 30 minutes until the dip is bubbly and the cheese is melted.
- Serve immediately!
