This Beef Enchilada Skillet is such an easy weeknight meal! It’s low carb, high protein and can be divided and saved into individual servings for meal prep. Serve it with rice or tortillas or just enjoy alone.

- lean ground beef
- small yellow onion
- black beans
- green chilis
- enchilada sauce
- shredded mexican cheese blend
- olive oil
- garlic powder
- sea salt
- black pepper

How To Make Beef Enchilada Skillet
Heat olive oil in a large skillet over medium-high heat and add the chopped yellow onion.
I used my cast iron skillet but it’s not necessary for this recipe. If you do use a cast iron skillet, you don’t need to heat the teaspoon of olive oil before adding the onions.
Cook the onions for 2 – 3 minutes and then add the lean ground beef and garlic powder. Salt and pepper to your taste. If you don’t use lean ground beef, you may have to drain your beef before the next step.
Cook until ground beef is cooked through, about 5 – 8 minutes. Add the drained black beans, green chilis and enchilada sauce and stir through.
Cook at a low boil/simmer for about 10 minutes, mixture should thicken up. Then add the shredded cheese to the top and continue cooking until cheese melts. You can cover the pan with a lid to speed the melting.
Serve with rice, tortillas or veggie! Hope you enjoy!

- Cook ground beef thoroughly, about 5 – 8 minutes.
- Add drained black beans, green chilis and enchilada sauce.
- Bring to a low boil and cook for 10 minutes, mixture should thicken up.
- Add cheese to top and continue to cook until cheese is melted.
- Serve with rice or tortillas.
