Ingredients

- 1 lb. lean ground beef
- 1 small yellow onion
- 15 oz. black beans, drained
- 4.5 oz. green chilis
- 10 oz. enchilada sauce
- 1 cup shredded mexican cheese blend
- 1 tsp. olive oil
- 1/2 tsp. garlic powder
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add chopped yellow onion and cook for 2 – 3 minutes.
- Add lean ground beef, garlic powder and salt and pepper to taste.
- Cook ground beef thoroughly, about 5 – 8 minutes.
- Add drained black beans, green chilis and enchilada sauce.
- Bring to a low boil and cook for 10 minutes, mixture should thicken up.
- Add cheese to top and continue to cook until cheese is melted.
- Serve with rice or tortillas.
