  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add chopped yellow onion and cook for 2 – 3 minutes.
  3. Add lean ground beef, garlic powder and salt and pepper to taste.
  4. Cook ground beef thoroughly, about 5 – 8 minutes.
  5. Add drained black beans, green chilis and enchilada sauce.
  6. Bring to a low boil and cook for 10 minutes, mixture should thicken up.
  7. Add cheese to top and continue to cook until cheese is melted.
  8. Serve with rice or tortillas.
  9. Enjoy!
