Blueberry Banana Bread

This Blueberry Banana Bread is full of traditional banana flavors with a generous addition of blueberries! Perfect use for those old bananas you don’t know what to do with! So easy to make!

How To Make Blueberry Banana Bread

Preheat your oven to 350 degrees and line a loaf pan with parchment. I like using parchment paper so I can just “lift” the loaf right out of the pan and onto a wire rack after baking! I also use a little cooking spray in the pan before so the parchment stays in place! Just a little tip!

In a large bowl, place the bananas and sprinkle them with the baking soda, let sit for 5 minutes. I use REALLY ripe bananas, in fact, these bananas were in the freezer, I had to let them thaw for a little bit. I just hate wasting ripe bananas, so I place them in the freezer until I am ready to use!

Ok, add crisco and sugar to the bananas, then beat well with a hand mixer. Next, add in the eggs and vanilla extract mixing well. Lastly, mix in the flour. The batter should be smooth. Stir in the blueberries, reserving a few or more to place on the top. This is completely optional, it just makes the loaf look pretty 🙂

Spread the batter evenly into the parchment lined pan and add the reserved blueberries to the top. Bake at 350 for 60 minutes, then check with a toothpick or knife in the center of loaf. If it’s not clean, continuing baking in 5 minute increments. I baked mine for 75 minutes. Baking time will vary depending on your loaf pans and ovens.

Once baking is complete, cool on a wire rack. This is where the parchment is handy, just lift out of the pan and place on the rack! Let cool for a few minutes before slicing.

This bread also freezes well. I slice and place in large resealable bags so it’s easy to grab one on the go!

Ingredients

  • 1 3/4 cup all-purpose flour

  4. Next, beat in the eggs and vanilla extract.
  5. Add in the flour and mix well.
  6. Stir in the blueberries by hand, reserving a few for the top of the loaf.
  7. Pour batter into the parchment lined loaf pan.
  8. Place reserved blueberries on the top.
  9. Bake for 60 minutes, then check center with a toothpick or knife, if not clean continue baking in 5 minute increments until toothpick is clean.
  10. Cool on a wire rack.
  11. Slice and serve or freeze in an airtight container.
  12. Enjoy!

Notes

  1. If you don’t use parchment, make sure you grease the loaf pan well with cooking spray.
  2. This recipe works best with those really ripe bananas that you don’t know what to do with!
  3. I have found that all loaf pans are different, so bake for 60 minutes and then check for a clean toothpick.
