Blueberry Banana Bread

Instructions

  1. Preheat oven to 350 and line a loaf pan with parchment, set aside.
  2. In a large bowl, add the bananas and sprinkle with baking soda, let sit for 5 mins.
  3. Then add the crisco and sugar, beat well with a hand mixer.
  4. Next, beat in the eggs and vanilla extract.
  5. Add in the flour and mix well.
  6. Stir in the blueberries by hand, reserving a few for the top of the loaf.
  7. Pour batter into the parchment lined loaf pan.
  8. Place reserved blueberries on the top.
  9. Bake for 60 minutes, then check center with a toothpick or knife, if not clean continue baking in 5 minute increments until toothpick is clean.
  10. Cool on a wire rack.
  11. Slice and serve or freeze in an airtight container.
  12. Enjoy!

Notes

  1. If you don’t use parchment, make sure you grease the loaf pan well with cooking spray.
  2. This recipe works best with those really ripe bananas that you don’t know what to do with!
  3. I have found that all loaf pans are different, so bake for 60 minutes and then check for a clean toothpick.
