Blueberry lovers listen up! These Blueberry Cookie Bars are soon to be your new favorite treat! They are soft, chewy and loaded with blueberries! Made in one bowl and ready in no time!

Blueberry Cookie Bars

Ingredients Needed For Blueberry Cookie Bars

  • salted butter
  • granulated sugar
  • light brown sugar
  • large eggs
  • vanilla extract
  • all-purpose flour
  • baking powder
  • sea salt
  • blueberries

How To Make Blueberry Cookie Bars

Preheat oven 350 degrees and lightly grease a 13 x 9 glass baking dish with cooking spray, set aside. In a large bowl, beat the softened butter and sugars with a hand mixer until combined. Then mix in eggs and vanilla extract. Lastly, beat in all-purpose flour, baking powder and sea salt.

Divide the dough and spread two-thirds of the batter into the greased 13 x 9 glass baking dish. Sprinkle the pint of blueberries on top of the batter. Dollop the remaining batter on top of blueberries.

Bake for 25 – 28 minutes, checking at 25 minutes with a toothpick. If the toothpick isn’t clean, bake for 1 – 2 minutes more or until clean. Cool before cutting. Refrigerate or freeze in an airtight container.

Ingredients

  • 3/4 cup salted butter, softened
  • 1 1/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 1/3 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • pinch of sea salt
  • 1 pint blueberries

Instructions

  1. Preheat oven 350 degrees and grease a 13 x 9 pan.
  2. In a large bowl, mix softened butter, granulated sugar and light brown sugar using a hand mixer until combined.
  3. Mix in eggs and vanilla extract.
  4. Add flour, baking powder and salt and mix until combined.
  5. Spread about 2/3 of the batter in the greased 13 x 9 pan.
  6. Sprinkle blueberries over top.
  7. Dollop the rest of the batter on top.
  8. Bake 25 – 28 minutes.
  9. Enjoy!
