These Blueberry Ricotta Muffins are so light, soft and full of blueberries! So easy to make for your next breakfast, brunch or weekly meal prep! This variation of the traditional muffin will not disappoint!

How to Make Blueberry Ricotta Muffins:
These Blueberry Ricotta Muffins are super easy to pull together! And can be made all in one bowl for easy clean up!
Preheat oven to 350 degrees and line a muffin pan with paper liners. In a large bowl, beat the sugar with the melted and cooled butter. Then beat in the eggs and ricotta cheese.
Once the eggs and ricotta are combined into the batter, mix in the flour and baking powder. Then fold in the blueberries by hand. Reserve a few blueberries to add to the top of the muffins, if desired.
Evenly divide the batter between the paper liners. The batter will be thick, so make sure to spread it evenly. I used a cookie scoop. If you reserved a few berries, add them to the top now.
Bake for 30 minutes or until a toothpick comes out clean. Dense muffins tend to take extra time to bake, so depending on your oven and your muffin pan, these muffins could take longer to bake.
Cool in pan for a few minutes before removing muffins to cooling rack. Dust with powdered sugar if desired.

Ingredients
- 1/2 cup salted butter, melted and cooled
- 1 cup granulated sugar
- 3 large eggs
- 15 oz ricotta cheese
- 1 1/2 cups All-Purpose Flour
- 2 tsp Baking Powder
- 2 cups blueberries
Instructions
- Preheat oven to 350 degrees.
- Place liners in a 12 count muffin pan.
- In a large bowl, beat together butter and sugar.
- Add in the eggs and ricotta, mix until combined.
- Then beat in the flour and baking powder.
- Fold in the blueberries by hand.
- Divide batter equally between the muffin liners.
- Bake for 30 minutes or until a toothpick comes out clean.
