Broccoli and Mushroom Grain Bowl

Ingredients

  • 1 tbsp olive oil
  • 8 oz baby bella or white button mushrooms, sliced
  • 8 oz broccoli florets
  • 1/2 small yellow or white onion, chopped
  • 1/4 cup water
  • 3 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tsp fresh ginger, grated
  • 34 garlic cloves, minced
  • 1 tsp chili garlic sauce (optional)
  • 8 oz 90 second farro, quinoa or brown rice

Instructions

  1. In a large skillet, heat olive over medium-high.
  2. Add in onion, broccoli, mushrooms and saute for a few minutes.
  3. Add in the water and steam the veggies.
  4. After a few minutes, mix the sauce ingredients, soy sauce, rice wine vinegar, minced garlic, grated ginger and chili garlic sauce.
  5. Stir and cook for a few more minutes, meanwhile heating the 90 second pouch.
  6. Place the grains into bowls and top with the stir fry.
  7. If desired, garnish with sesame seeds.
  8. Enjoy!
