What’s for dinner? How about this easy peasy Caprese Baked Chicken?! Made with fresh basil, grape tomatoes, kalamata olives and topped with mozzarella cheese, this will be your new favorite chicken dish!

Caprese Baked Chicken

Ingredients Needed for Caprese Baked Chicken:

  • chicken cutlets
  • olive oil
  • grape or cherry tomatoes
  • kalamata olives
  • fresh basil leaves
  • garlic cloves
  • dried italian seasoning
  • garlic powder
  • sea salt
  • black pepper
  • mozzarella

How To Make Caprese Baked Chicken:

This Caprese Baked Chicken uses fresh and dried ingredients, and even if you aren’t an olive or tomato fan I strongly suggest trying this dish just for the flavors. The olive oil sauce that results is perfect for a side dish of pasta!

Preheat the oven to 350 degrees. Drizzle half of the olive oil on the bottom of a 13 x 9 baking dish. Arrange the fresh garlic cloves and basil leaves on the top of the olive oil. I always add a range of basil or garlic in my recipes since cloves and leaves can all be different sizes. The rule here is to arrange enough of them to cover the bottom of the chicken when placed in the dish.

So, now arrange the chicken cutlets on top of the basil, garlic and olive oil. I am using chicken cutlets because I like the thickness of this cut of chicken and I like how quickly it cooks. You can use chicken breasts but you will need to add time to the bake to make sure the chicken in cooked through maybe an extra 10 minutes.

Now, season the chicken with italian seasoning, garlic powder, salt and pepper.

Arrange the tomatoes, olives and remaining basil and garlic around the chicken cutlets. I even drizzled in a little olive juice. Then drizzle the remaining olive oil over the chicken.

Bake for 30 minutes, stirring the tomatoes and olives half way through. At 30 minutes, top the chicken with shredded mozzarella cheese and bake for additional 10 minutes.

Remove from the oven and serve immediately! And don’t forget the sauce! The olive oil sauce is great for dipping the chicken or pouring over a side of pasta!

Ingredients

  • 1 lb chicken cutlets
  • 1/4 cup olive oil, divided
  • 1 pt grape or cherry tomatoes
  • 1/2 cup kalamata olives
  • 10–12 fresh basil leaves
  • 6–10 garlic cloves
  • 1 tsp dried italian seasoning
  • 1 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup mozzarella, shredded

Instructions

  1. Preheat oven to 350 degrees.
  2. Drizzle half of the olive oil in the bottom of a 13 x 9 baking dish.
  3. Arrange 6 – 9 garlic cloves and basil leaves on top of the olive oil.
  4. Place the chicken cutlets on top of the basil, garlic and olive oil.
  5. Season the chicken with italian seasoning, garlic powder, salt and pepper.
  6. Arrange the tomatoes, olives and remaining garlic cloves and basil leaves around the chicken in the dish.
  7. Drizzle the top of the chicken with the remaining olive oil.
  8. Bake for 30 minutes, stirring the tomatoes and olives half way through.
  9. Remove from oven and top with mozzarella.
  10. Bake an additional 10 minutes or until cheese is melted and bubbly.
  11. Serve immediately.
  12. Enjoy!
