Ingredients

- 1 lb chicken cutlets
- 1/4 cup olive oil, divided
- 1 pt grape or cherry tomatoes
- 1/2 cup kalamata olives
- 10–12 fresh basil leaves
- 6–10 garlic cloves
- 1 tsp dried italian seasoning
- 1 tsp garlic powder
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1 cup mozzarella, shredded
Instructions
- Preheat oven to 350 degrees.
- Drizzle half of the olive oil in the bottom of a 13 x 9 baking dish.
- Arrange 6 – 9 garlic cloves and basil leaves on top of the olive oil.
- Place the chicken cutlets on top of the basil, garlic and olive oil.
- Season the chicken with italian seasoning, garlic powder, salt and pepper.
- Arrange the tomatoes, olives and remaining garlic cloves and basil leaves around the chicken in the dish.
- Drizzle the top of the chicken with the remaining olive oil.
- Bake for 30 minutes, stirring the tomatoes and olives half way through.
- Remove from oven and top with mozzarella.
- Bake an additional 10 minutes or until cheese is melted and bubbly.
- Serve immediately.
