How to Make Cheddar and Bacon Irish Soda Bread
This recipe is so easy! With only 6 ingredients and no rise time, this bread can be on the table in less than an hour!
Pre-heat your oven to 450 degrees. Make sure you arrange the racks in your oven so that you can place the bread in the middle.
In a large bowl, sift the flour, baking soda and salt together.
Add the grated Irish cheddar and bacon pieces. Note, I cheated here for time’s sake and bought bacon pieces found near the salad dressing in your local grocery but you can cook up a few bacon slices as well.
Stir to incorporate the cheese and bacon into the flour mixture.
Create a well in the middle of the mixture and pour in the buttermilk.
Mix until the dough holds together. The dough will be sticky.
Transfer dough to a floured surface and then lightly flour the top. Knead into a 6 inch round loaf and place on a parchment lined sheet pan.
Bake for 15 minutes at 450 degrees on a rack in the middle of the oven. Then lower the temperature to 400 and bake for 20 minutes.
Let cool for 15 – 20 minutes on a wire rack before slicing.

- 2 2/3 cups all-purpose flour
- 1 1/2 cups buttermilk
- 1 tsp baking soda
- 1 tsp salt
- 1 cup grated irish cheddar
- 1/2 cup bacon pieces
Instructions
- Pre-heat oven to 450 degrees and line a sheet pan with parchment.
- In a large bowl, sift together the flour, baking soda and salt.
- Mix in grated cheddar and bacon pieces.
- Create a well in the middle of flour and cheese mixture, pour in the buttermilk.
- Mix with a spoon until all the buttermilk is incorporated and the dough sticks together.
- On a floured surface, transfer dough and sprinkle a little flour on top and lightly knead into a round loaf. About 6 inches wide.
- Place loaf on parchment lined sheet pan and cut a deep cross into the top of the loaf.
- Bake for 15 minutes on a rack in the middle of the oven, then drop to 400 degrees and bake for another 20 minutes.
- Cool for 15 – 20 minutes on a wire rack before cutting.
