Cheddar and Bacon Irish Soda Bread

Instructions

  1. Pre-heat oven to 450 degrees and line a sheet pan with parchment.
  2. In a large bowl, sift together the flour, baking soda and salt.
  3. Mix in grated cheddar and bacon pieces.
  4. Create a well in the middle of flour and cheese mixture, pour in the buttermilk.
  5. Mix with a spoon until all the buttermilk is incorporated and the dough sticks together.
  6. On a floured surface, transfer dough and sprinkle a little flour on top and lightly knead into a round loaf. About 6 inches wide.
  7. Place loaf on parchment lined sheet pan and cut a deep cross into the top of the loaf.
  8. Bake for 15 minutes on a rack in the middle of the oven, then drop to 400 degrees and bake for another 20 minutes.
  9. Cool for 15 – 20 minutes on a wire rack before cutting.
  10. Enjoy warm.
