These Cheesy Scalloped Potatoes are so creamy and the perfect side for a holiday or any day! Yukon Gold potatoes and cheddar cheese make the perfect combination for this popular side dish!

- yukon gold potatoes
- shredded white cheddar
- shredded sharp cheddar
- salted butter
- all-purpose flour
- milk
- sea salt

How To Make Cheesy Scalloped Potatoes
Preheat oven to 350 degrees and lightly grease a small casserole dish with cooking spray. I used a round baking dish but the shape doesn’t matter! Also, pictured is a small dish, if you can making for a crowd I suggest doubling the recipe.
Wash and thinly slice 3 – 4 Yukon Gold potatoes. I used a crinkle cutter in this recipe but you can also use a mandoline or a sharp knife. The potatoes should be thin but not as thin as a potato chip.
Now, arrange the sliced potatoes in the greased dish and shred the cheddar cheeses using a box grater if needed. I used a heaping 1/2 cup of each (maybe a little more ;)). You can also buy already shredded cheeses. Set aside.
In a medium saucepan, melt butter over medium heat. While continuously stirring, add the flour. Be careful to not burn the flour, you may need to lower the heat.
Slowly pour in milk while continuously stirring to remove the lumps. I suggest using a whisk. Let come to a low boil and simmer for a few minutes until the sauce thickens.
Pour sauce evenly over potatoes. Then top with the shredded cheeses.
Bake for 1 hour and serve immediately!

- Pre-heat oven to 350 and lightly grease a small casserole dish.
- Thinly slice the potatoes and shred the cheddar if needed.
- Arrange the potatoes in the greased casserole dish.
- In a medium saucepan, melt the butter over medium heat.
- While stirring continuously, add the flour. Making sure to not burn.
- Slowly pour in milk while continuously stirring.
- Bring the sauce to low boil and let simmer until it’s slightly thickened.
- Pour sauce over potatoes.
- Top with shredded cheese.
- Bake for 1 hour.
- Serve immediately.

- This recipe makes enough for 3 – 4 people, if making for a larger group, I suggest doubling the recipe.
