These Two Ingredient Chocolate Muffins will be your new go-to breakfast treat! Yes, I said TWO ingredients! These muffins are so soft, chocolatey and make great meal prep! Did I mention they are only 159 calories?

How To Make Two Ingredient Chocolate Muffins

So, let’s get to those TWO ingredients. All you need is a can of pumpkin and a box of Devil’s Food Cake mix. That’s it! I told you it was easy!

First, preheat oven to 350 degrees. Then place both ingredients to a large mixing bowl and beat with a hand mixer until completely combined. You can also stir by hand with a wooden spoon. The batter will be thick.

Line a muffin tin with cupcake liners. Using a cookie scoop, evenly divide the batter into 12 lined muffin tins. I used a muffin stone lightly greased with cooking spray, you can also lightly greased a metal muffin tin if you do not have liners.

Bake for 20 – 25 minutes. I suggest checking at 20 minutes with a toothpick. Ovens and bakeware vary. Typically mine bake for 22 minutes.

Transfer to a rack for cooling. Enjoy immediately or cool and freeze for meal prep!

TIP: If you freeze, pop in the microwave for 30 – 60 seconds and it will be like they were just baked!

Ingredients

  • 1 box devil’s food cake mix
  • 15 oz pure pumpkin (1 can)

Instructions

  1. Pre-heat oven 350 degrees
  2. Add pumpkin and cake mix to large bowl
  3. Beat until combined
  4. Using a cookie scoop, evenly divide into 12 lined muffin tins
  5. Bake 20 – 25 minutes, checking at 20 minutes with a toothpick
  6. When toothpick is clean, remove from oven
  7. Transfer to wire rack to cool
  8. Enjoy!!

Notes

  • Bake time is typically 22 minutes in a muffin stone.
  • If you don’t have cupcake liners, you can lightly grease your muffin tin with cooking spray.
