Instructions
- Pre-heat oven 350 degrees
- Add pumpkin and cake mix to large bowl
- Beat until combined
- Using a cookie scoop, evenly divide into 12 lined muffin tins
- Bake 20 – 25 minutes, checking at 20 minutes with a toothpick
- When toothpick is clean, remove from oven
- Transfer to wire rack to cool
- Enjoy!!
Notes
- Bake time is typically 22 minutes in a muffin stone.
- If you don’t have cupcake liners, you can lightly grease your muffin tin with cooking spray.
- Store in airtight container
- Freezes well
- If frozen, remove when ready to eat and microwave for 30 – 60 seconds.
