This foil packet Cilantro Lime Salmon is so light and is the perfect recipe for summer! Garnish with a salsa, like this Mango Salsa, for a fresh and sweet meal. Plus, using foil packets make clean up a cinch!
Note: This recipe serves two people, adjust accordingly if using more salmon fillets.
Preheat oven to 350. Line a sheet pan with foil with enough extra to be able to fold into a foil packet.
Arrange the salmon fillets on top of the foil. Season each fillet with a tablespoon of olive oil, and salt and pepper to taste.
Arrange fresh cilantro on top of each, covering the fillet.
Then do the same with the lime slices.
Fold up the foil and cinch the edges closed.
Bake for 20 minutes. Then unwrap the foil packet, being careful of steam when opening. Change the oven to broil and place the unwrapped salmon under the broiler for 10 minutes. This will give the salmon a little color.
Once done, transfer the Cilantro Lime Salmon to plates and garnish with mango salsa if desired.

- 2 Salmon Fillets
- 2 tbsp Olive Oil
- 1/2 Lime, sliced
- Cilantro
- Salt
- Pepper

Place the Salmon on the foil.

Top each fillet with one tablespoon of olive oil.

Salt and Pepper each fillet to taste.

Cover the top of each fillet with fresh cilantro.

Arrange the lime slices on top of the cilantro.

Fold up the foil and cinch closed.

Bake for 20 minutes.

Unwrap the packet, being careful of steam.

Turn the oven to broil.

Place salmon under broiler for 10 minutes.

Transfer to plates and top with Mango Salsa, if desired.
