These Cinnamon Cereal Bars will have you questioning whether it’s breakfast or dessert! Cinnamon cereal, salty bacon and marshmallows will leave you wanting more!
I love this salty and cinnamon twist on the traditional marshmallow cereal bar! These Cinnamon Cereal Bars are just as easy to make but with a cinnamon crunch!
So, let’s start with the pan. I used a 9×9 square baking dish. This does make thick bars so you may want to cut them on the smaller side. You can also use a 13×9 baking dish, this way the bars will not be as thick but just as delicious! Once you have chosen your baking dish, make sure to grease with butter or cooking spray and set it aside.
In a medium-large saucepan, melt the butter. I suggest using some sort of non-stick saucepan if you have one. This gets pretty sticky with the marshmallows. I also suggest using a rubber spatula.
Once the butter is melted, stir in the mini marshmallows. Continually stir them until they are completely melted. Remove the pan from heat.
Stir in the cereal and chopped bacon. If your pan is not big enough, you can transfer to a greased bowl to mix. I suggest greasing it for the same sticky reasons as above 🙂
Spread the mixture into the greased baking dish. Let sit for 30 – 60 minutes to set, then cut into bars.

Spread into square dish.

Let set for about an hour and then cut into squares or bars.
