These Cinnamon Oatmeal Bars are quickly becoming a new favorite around here! These bars are where coffee cake meets an oatmeal cookie! Cinnamon and chewy oats are the perfect combination!

- baking mix (such as bisquick)
- quick oats
- ground cinnamon

How To Make Cinnamon Oatmeal Bars
I don’t know if I’ve mentioned it before, but I love making cookies in bar form. It’s super easy and takes less time which is perfect in this busy world.
Start by pre-heating the oven to 350 degrees and lightly grease a 13 x 9 baking dish with cooking spray. I prefer ceramic or glass dishes for making cookie bars.
In a large bowl, beat the softened butter and brown sugar with a hand mixer. Add in the eggs and vanilla and beat until well incorporated. Add in the baking mix a.k.a Bisquick and blend. Lastly beat or stir in the oats.
In the greased baking dish, spread 1/2 to 2/3 of the batter across the bottom of the dish. In a small bowl, stir together the 1/2 cup of brown sugar and cinnamon.
Sprinkle all the brown sugar and cinnamon mixture on top of the batter. Then drop dollops of the remaining batter over top of the brown sugar and cinnamon.
Bake for 30 minutes. Let the Cinnamon Oatmeal Bars cool for about 15 minutes before cutting.

- 2 cups light brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups baking mix (such as bisquick)
- 3 cups quick oats
Filling
- 1/2 cup light brown sugar
- 2 tbsp ground cinnamon
Instructions
- Preheat oven to 350 degrees and lightly grease a 9 x 13 baking dish with cooking spray.
- In a large bowl, beat together the softened butter and 2 cups of the brown sugar with a hand mixer.
- Next beat in the eggs and vanilla.
- Then mix in the baking mix.
- Stir in the oats by hand and set mixture a side.
- In a small bowl, combine the 1/2 cup of brown sugar and cinnamon.
- Spread about 1/2 – 2/3 of the oatmeal batter into greased baking dish, batter will be thick.
- Sprinkle all the Brown Sugar Cinnamon mixture on top of the oatmeal batter, then drop the remaining oatmeal batter in dollops over top.
- Bake for 30 minutes, let cool slightly before cutting.
