How To Make Cinnamon Sugar Popovers:
This recipe uses a 12 count muffin tin but, if you have one, you can use a popover tin. Also, I used a blender, but if you have a large food processor, that would also work, as would a large bowl and hand mixer.
Place your muffin tin or popover pan in the oven on a middle rack and preheat to 425. This recipe takes minutes to mix together so starting the oven early is a good idea. Then melt the butter and mix the cinnamon sugar before starting on the blending.
Back at the blender, add the eggs, milk, vanilla and mix or pulse until combined. Add the flour, sugar and melted and cooled butter and mix together. The butter doesn’t have to be cold but cooled enough that it won’t curdle the eggs. This is why I like to add the butter last. Scrape down the sides if needed and pulse again.
Now, we need to move quickly so the pan doesn’t cool. Carefully remove the muffin tin from the oven using oven mitts. Spray each tin with cooking spray. Evenly pour the batter into each tin, they should be about 3/4 full or so. Sprinkle the tops with the cinnamon sugar mixture.
Place back in the oven and bake for 20 minutes. At 20 minutes, reduce heat to 350 degrees and bake for another 10 – 15 minutes.
Remove from the oven and cool for about 5 minutes before removing from the pan.
