Classic Almond Biscotti

These Classic Almond Biscotti are always a good idea! Perfect to enjoy alone, with a cup of coffee or dunked in a glass of vin santo! Plus, they are so easy to make!

Ingredients Needed To Make Classic Almond Biscotti

  • granulated sugar
  • salted butter
  • large eggs
  • anise seeds
  • lemon peel
  • anise extract
  • lemon extract
  • all-purpose flour
  • baking powder
  • sliced almonds

How To Make Classic Almond Biscotti

Preheat oven to 375 degrees and line a sheet pan with parchment.

In a large bowl, cream together the softened butter and sugar with an electric hand mixer. Beat in the eggs one at a time and then mix in the lemon extract, anise extract, anise seeds and lemon peel. Next, mix in the flour and baking powder. The batter will be stiff. Stir in the sliced almonds by hand.

Divide the batter in half and shape into 8x2x1 logs. Place the logs onto the parchment lined sheet pan. Leave enough space for the logs to expand., about 2 inches.

Bake for 20 – 25 minutes. Remove from oven and cool for 30 minutes.

Using a serrated knife, slice the logs diagonally into one inch slices. You should get about 15 slices per log. Return the sliced cookies to the parchment lined sheet pan laying the pieces on one side. Bake at 350 for 10 minutes then flip to the other side. Bake for another 10 minutes.

Cool and store in an airtight container.

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup salted butter, softened

  • 2 tsp lemon peel, grated
  • 1 tbsp anise seeds
  • 1 tbsp anise extract
  • 1 tbsp lemon extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 cup sliced almonds

Instructions

  1. Preheat oven to 375 degrees and line a sheet pan with parchment.
  2. In a large bowl, beat together the butter and sugar with an electric hand mixer until smooth.
  3. Beat in the eggs, one at a time.
  4. Then mix in the lemon extract, anise extract, anise seeds and lemon peel.
  5. Lastly, beat in the dry ingredients, flour and baking powder.
  6. Stir in the sliced almonds by hand.
  7. Split the dough in half and shape into rectangular logs, approx. 8x2x1 in size, and place on a parchment lined sheet pan.
  8. Bake for 20 – 25 minutes.
  9. Remove from oven and cool for about 30 minutes.
  10. Using a serrated knife, slice the logs into 1 inch slices diagonally .
  11. Arrange all the slices on the baking sheet on their sides.
  12. Bake for 10 minutes then flip to other side, bake another 10 minutes.
  13. Let cool completely and store in an airtight container.
  14. Enjoy!!
