Classic Oatmeal Cookies

There is nothing better than warm Classic Oatmeal Cookies! They are the perfect combination of soft and chewy, and with the added bonus of cinnamon, they are sure to be a crowd pleaser!

Ingredients Needed For Classic Oatmeal Cookies

  • salted butter
  • light brown sugar
  • granulated sugar
  • large eggs
  • vanilla extract
  • all-purpose flour
  • old fashioned oats or quick oats
  • ground cinnamon
  • baking soda
  • baking powder
  • sea salt

How To Make Classic Oatmeal Cookies

Pre-heat oven to 350 degrees and line a sheet pan with parchment. The parchment is not required but I love how easy it makes the cleanup. If you don’t use parchment, make sure to lightly grease with cooking spray.

In a large bowl, beat together the softened butter and sugars with a hand mixer or stand mixer. Then add in the eggs and vanilla extract and beat well. Then the flour, oats, ground cinnamon, baking soda, baking powder and salt.

Now, using a cookie scoop or a tablespoon, measure heaping tablespoons and place on cookie sheet. I was able to fit about a dozen per cookie sheet.

Bake for about 12 minutes, not letting the bottoms burn but letting them brown. Make sure the centers are baked, cookies will look soft. Transfer to wire rack to cool and repeat with remaining cookie dough.

Ingredients

  • 1/2 cup salted butter, softened
  • 3/4 cup light brown sugarĀ 
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old fashioned oats or quick oats
  • 2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt

Instructions

  1. Preheat oven 350 degrees
  2. In a large mixing bowl, add butter, light brown sugar and granulated sugar and beat until creamed together
  3. Beat in eggs and vanilla until smooth
  4. Beat in flour, oats, ground cinnamon, baking soda, baking powder and salt
  5. Using a cookie scoop, drop a heaping tablespoon on to un-greased cookie sheet, about 12 cookies per sheet pan.
  6. Bake for 12 minutes, cool on wire rack and continue with remaining cookie dough.
  7. Makes about 30 cookies
  8. Enjoy!
