How To Make Cranberry and Pistachio Icebox Cookies
These cookies come together very easily, it’s the chilling that takes the longest! In a large bowl, beat the butter and sugars with a hand mixer. Then beat in the egg and vanilla extract.
Next, mix in the flour, baking powder and salt. Stir in by hand the chopped cranberries and pistachios. Cover the bowl with plastic wrap and chill for about 1 hour.
Remove dough from refrigerator, split in half and place each half on a piece of plastic wrap. Form the dough into a log and wrap in the plastic wrap. Place in the freezer or refrigerator until firm.
When ready to bake, preheat oven to 350 degrees. Using a sharp knife or pastry cutter, slice the dough into 1/4 – 1/2 inch cookies. Place them on a parchment lined sheet pan and bake for 12 minutes.
Cool cookies on a wire rack, continue slicing and baking with remaining dough. Store in a airtight container.

- 3/4 cup granulated sugar
- 1/4 cup light brown sugar

- Remove from refrigerator and split dough in half, roll into logs and wrap in plastic wrap. Place in freezer or refrigerator until firm.
- Using a sharp knife or pastry cutter, slice about 1/4 – 1/2 inch cookies.
- Place on parchment lined sheet pan.
- Bake at 350 for 12 minutes, cool on wire rack.
