Cranberry Oatmeal Cookies are an instant classic for the holidays! They are the perfect combination of soft and chewy, and with the added tang of dried cranberries they are sure to be a crowd pleaser!

- salted butter
- light brown sugar
- granulated sugar
- large eggs
- vanilla extract
- all-purpose flour
- old fashioned oats or quick oats
- ground cinnamon
- baking soda
- baking powder
- sea salt
- dried cranberries

How To Make Cranberry Oatmeal Cookies
Everyone loved an oatmeal cookie and this variety is no exception! First, pre-heat oven to 350 degrees and line a sheet pan with parchment. The parchment is not required but I love how easy it makes the cleanup.
In a large bowl, beat together the softened butter and sugars with a hand or stand mixer. Then add in the eggs and vanilla extract and beat well. Then the flour, oats, baking soda and baking powder.
Last but definitely not least! Stir in the dried cranberries using a large spoon. Now, using a cookie scoop or a tablespoon, measure heaping tablespoons and place on cookie sheet. I was able to fit about a dozen per cookie sheet.
Bake for about 10 – 12 minutes, not letting the bottoms burn but letting them brown. Make sure the centers are baked. Transfer to wire rack to cool and repeat with remaining cookie dough.

- 1/2 cup salted butter, softened
- 3/4 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 cups old fashioned oats or quick oats
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp sea salt
- 2 cups dried cranberries
Instructions
- Preheat oven 350 degrees
- In a large mixing bowl, add butter, light brown sugar and granulated sugar and beat until creamed together
- Beat in eggs and vanilla until smooth
- Beat in flour, oats, baking soda, baking powder and salt
- Mix in by hand the dark chocolate chips
- Using a cookie scoop, drop a heaping tablespoon on to un-greased cookie sheet.
- Bake for 10 – 12 minutes
- Makes about 2 dozen cookies
