How To Make Cranberry Orange Biscotti
Preheat oven to 375 degrees and line a sheet pan with parchment.
In a large bowl, cream together the softened butter and sugar with an electric hand mixer. Beat in the eggs one at a time and then mix in the orange extract and fresh orange peel or dried orange peel. Next, mix in the all-purpose flour and baking powder. The batter will be stiff. Stir in the dried cranberries by hand.
Divide the batter in half and shape into 8x2x1 logs. Place the logs onto the parchment lined sheet pan. Leave enough space for the logs to expand, about 2 inches.
Bake for 20 – 25 minutes. Remove from oven and cool for 30 minutes.
Using a serrated knife, slice the logs diagonally into one inch slices. You should get about 15 slices per log. Return the sliced cookies to the parchment lined sheet pan laying the pieces on one side. Bake at 375 for 10 minutes then flip to the other side. Bake for another 10 minutes.
Cool and store in an airtight container.
Hope you enjoy!
