Cranberry Orange Ricotta Cake

Instructions

  1. Preheat oven to 350 degrees and grease a bundt pan and set aside.
  2. In a large microwave safe mixing bowl, melt the butter and let cool.
  3. Once the butter has cooled, beat in the sugar, eggs and ricotta cheese with a hand mixer.
  4. Mix in the orange extract and orange zest.
  5. Then beat in the flour and baking powder.
  6. Lastly, stir in the dried cranberries.
  7. Spoon the batter into the greased bundt pan, spreading evenly.
  8. Bake for 45 minutes or until toothpick comes out clean.
  9. Remove from oven and let sit for 5 minutes before turning out on to a cooling rack.
  10. Let cool completely before icing.
  11. In a medium bowl, whisk together the confectioners sugar and milk, icing will be thick.
  12. Place a sheet of parchment under the cooling rack and drizzle icing over top of cake.
  13. Enjoy!
