Creamy Mushroom and White Bean Pasta

Instructions

  1. In a large skillet, heat olive oil over medium heat and add the sliced mushrooms, garlic powder and sea salt.
  2. Stirring occasionally, cook mushrooms for about 5 – 10 minutes, or until soft.
  3. Add the drained and rinsed cannellini beans, dried pasta, cream of mushroom soup and chicken stock.
  4. Stir to combine, reduce heat to a simmer and cover.
  5. Cook covered for 20 -25 minutes or until pasta is al dente.
  6. Top with crushed croutons or italian breadcrumbs and grated parmesan cheese
  7. Place under the broiler for 3 – 5 minutes until golden brown.
  8. Serve with more parmesan cheese if desired.
  9. Enjoy!

Notes

  • If you don’t have a skillet with a lid, you can cover the skillet with aluminum foil.
