Would you believe me if I told you these Double Chocolate Cookies are only THREE ingredients?? Well, prepare to be amazed! Yes, only three ingredients, no eggs, no flour just a cake mix, pumpkin and chocolate chips!!
I love a shortcut recipe and these Double Chocolate Cookies might be my favorite one yet! These cookies are soft, chewy and practically melt in your mouth!
This batter comes together in minutes so get your oven preheating first! Line your cookie sheet with parchment, silicone mat or grease with cooking spray.
Beat the cake mix and pumpkin with an electric mixer until combined. Then stir the chocolate chips in by hand. Yep, that’s it, I told you it was easy.
Now, using a cooking scoop, measure out 12 cookies onto your prepared sheet pan. Keep about an inch between the cookies but these don’t spread much at all when baking.
Bake for 10 minutes at 350 degrees. Transfer the cookies to a wire rack to cool and bake the remaining cookies.
Cool the cookies completely before storing in an airtight container or bag. I keep mine in the freezer and they are perfect. Plus, they thaw in no time at all!
