Easy Beef Fried Rice

Ingredients

  • 3 tbsp olive oil, divided
  • 1/2 lb beef round or skirt steak, cut into stir-fry strips
  • 2 tbsp soy sauce
  • 2 tbsp salted butter
  • 1 tsp garlic powder
  • 1/8 tsp sea salt
  • 1/8 tsp black pepper
  • 2 packets 90 second jasmine rice
  • 56 green onions, finely chopped
  • 8 oz white button or shiitake mushrooms, finely chopped
  • 2 tsp chili garlic sauce (optional)
  • 3 tbsp soy sauce (plus more for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the stir-fry beef, 2 tablespoons of soy sauce, 2 tablespoons salted butter, garlic powder, sea salt and black pepper.
  3. Cook beef for 3-4 minutes, beef should cook quickly.
  4. Remove beef from skillet and set aside.
  5. Add the remaining 2 tablespoons of olive oil to the skillet, chopped green onions and mushrooms, stir and cook for 5 minutes.
  6. Add in the rice, stir and cook for another 5 minutes.
  7. Add the remaining 3 tablespoons of soy sauce, chili garlic sauce (optional) and the beef back to the skillet.
  8. Stir and cook for another 2 – 3 minutes.
  9. Add more soy sauce for garnish, if desired. Serve immediately!
  10. Enjoy!
