How To Make Fudgy Avocado Brownies
Preheat oven to 350 degrees and lightly grease a square baking dish with cooking spray. In a large mixing bowl, beat the smashed avocado and unsweetened applesauce with a hand mixer. Note, when I say I used a small avocado it was really small.
Next, mix in the egg, vanilla extract and maple syrup. I used a light maple syrup but classic maple syrup is fine, it will slightly alter the nutrition metrics listed below.
Then add the whole wheat flour, dark brown sugar, unsweetened cocoa powder, baking powder and mix until combined.
Stir in one cup of the semi-sweet chocolate chips by hand. You can use dark chocolate chips if you wish, but the brownies may be bitter.
Spread the batter into the greased baking dish and top with the remaining 1/4 cup of semi-sweet chips. Baking for 25 – 30 minutes, checking at 25 minutes with a toothpick. If the toothpick is not clean, bake for a couple more minutes at a time until clean. Note, these brownies are supposed to be soft and fudgy, be sure to not over bake.
Let cool and cut into squares. Hope you enjoy!
