Fudgy Avocado Brownies

Instructions

  1. Preheat oven to 350 and lightly grease a square baking dish, set aside.
  2. In a large mixing bowl, mix the smashed avocado and unsweetened applesauce with a hand mixer.
  3. Next, mix in the egg, vanilla extract and maple syrup.
  4. Then, beat in the whole wheat flour, dark brown sugar, unsweetened cocoa powder and baking powder.
  5. Stir in one cup of the semi-sweet chocolate chips.
  6. Spread into greased square baking dish and top with remaining 1/4 cup of chocolate chips.
  7. Bake for 25 – 30 minutes, testing with toothpick at 25 minutes. If the toothpick is not clean, bake for a couple more minutes at a time until clean. Note, these brownies are supposed to be soft and fudgy, be sure to not over bake.
  8. Cool and cut into squares.
  9. Enjoy!
