- 1 small avocado, ripe, peeled, pitted, and mashed smooth
- 1/2 cup unsweetened applesauce
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup maple syrup
- 3/4 cup whole wheat flour
- 1/2 cup dark brown sugar
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 1/4 cup semi-sweet chocolate chips

Instructions
- Preheat oven to 350 and lightly grease a square baking dish, set aside.
- In a large mixing bowl, mix the smashed avocado and unsweetened applesauce with a hand mixer.
- Next, mix in the egg, vanilla extract and maple syrup.
- Then, beat in the whole wheat flour, dark brown sugar, unsweetened cocoa powder and baking powder.
- Stir in one cup of the semi-sweet chocolate chips.
- Spread into greased square baking dish and top with remaining 1/4 cup of chocolate chips.
- Bake for 25 – 30 minutes, testing with toothpick at 25 minutes. If the toothpick is not clean, bake for a couple more minutes at a time until clean. Note, these brownies are supposed to be soft and fudgy, be sure to not over bake.
- Cool and cut into squares.
