Greek Orzo Salad

Ingredients

  • 4 oz orzo
  • 1 cup grape tomatoes or cherry tomatoes, halved
  • 1/2 cup kalamata olives, halved
  • 1/2 cucumber, sliced
  • 1/2 cup chickpeas, drained and rinsed
  • 1/4 cup red onion, chopped
  • 1/4 cup peperoncini
  • 1/4 cup feta, crumbled
  • 1/2 cup greek dressing
  • 1 tbsp olive oil

Instructions

  1. Cook orzo according to package instructions.
  2. Strain, drizzle with olive oil, toss and cool.
  3. While cooling, chop and slice the other ingredients.
  4. Add to orzo and toss with the Greek dressing.
  5. Serve immediately or refrigerate in an airtight container.
  6. Enjoy!
