Guinness Chocolate Cake

This Guinness Chocolate Cake is not just for St. Patrick’s Day! Make it for birthdays and gatherings and no one will be disappointed. With two layers of dark chocolate cake and fudge frosting, it will be your new go-to dessert! Did I mention it’s made in one bowl?!

Guinness Chocolate Cake

Ingredients for Guinness Chocolate Cake:

For the Cake:

  • all-purpose flour
  • granulated sugar
  • dark chocolate cocoa
  • baking powder
  • baking soda
  • large eggs
  • vanilla extract
  • vegetable oil or canola oil
  • bottle of Guinness stout

For the Frosting:

  • salted butter
  • confectioners sugar
  • unsweetened cocoa
  • milk
  • vanilla extract

How to Make Guinness Chocolate Cake:

We really love chocolate cake around my house and this Guinness Chocolate Cake is no exception! Did I mention how easy this cake is to make?

First, preheat the oven to 350 degrees. Then grease two 9-inch round cake pans. I used cooking spray, you can also use a layer of Crisco and dust it with flour.

In a large bowl, add all the ingredients. Yes, I said that right, just add all the ingredients in one bowl at the one time. Then, using a hand mixer, beat until combined.

Pour the batter into the greased cake pans, dividing the batter evenly. Bake for 30 minutes on a center oven rack. Transfer to wire racks to cool.

Once the cakes are cool, beat all the frosting ingredients together using a hand mixer. Now you may have noticed that I used dark chocolate cocoa in the cake and regular unsweetened cocoa in the frosting. You can use the dark chocolate in the frosting, the taste will be delicious but the color may be a little grey. Which is why I tend to only use the regular cocoa in frosting 🙂

Place one of the cakes on a plate or cake stand, frost the top and then stack the second cake on top. Finish frosting the entire cake.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup dark chocolate cocoa
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup vegetable oil or canola oil
  • 11 oz bottle of guinness stout

Frosting

  • 1/2 cup salted butter, softened
  • 3 cups confectioners sugar
  • 2/3 cup unsweetened cocoa
  • 1/3 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees and grease 2 9 inch round cake pans, set aside.
  2. In a large bowl, add all the cake ingredients and beat with a hand mixer until combined.
  3. Divide batter evenly into the greased cake pans.
  4. Bake for 30 minutes.
  5. Cool on wire rack.
  6. Once cool, beat all the frosting ingredients with a hand mixer.
  7. Frost the top of the bottom layer and stack other layer on top. Finish frosting the entire cake.
  8. Enjoy!

Notes

  • I used dark chocolate cocoa in the cake but regular unsweetened cocoa in the frosting. The dark chocolate cocoa tends to make the frosting look grayish, but you can use either type of cocoa in the cake and frosting.
