How To Make Easy Homemade Caramel Corn
First thing you need is the popcorn! You can use already popped popcorn or make it at home. It’s really easy to make at home, you really just follow the instructions on the popcorn kernel package. Heat the oil and kernels in a large pot covered with a lid, lift and shake the pot until you hear the popping slow, then remove from the heat!
Now preheat the oven to 250 degrees and line a large deep sheet pan with parchment. I used two 9 x 13 aluminum pans with parchment. The parchment really helps with the sticking and the clean up if you aren’t using disposable pans.
Add the popcorn to the pan(s) and place in the oven to keep warm while you prepare the caramel sauce.
In the medium saucepan, heat the brown sugar, butter and corn syrup over medium heat. Stir constantly until the mixture comes to a boil. Then, let boil untouched for 5 minutes and then remove from heat and stir in vanilla and baking soda.
Remove the popcorn from the oven and pour the caramel oven the popcorn. Toss to coat and return the popcorn to the oven for 45 minutes. Toss again halfway through. Remove from oven and let cool before breaking the popcorn apart. Store in an airtight container.

Ingredients
Popcorn
- 6 tbsp popcorn kernels
- 3 tbsp canola oil or vegetable oil
Caramel Sauce
- 1/2 cup salted butter
- 1 cup dark brown sugar
- 1/2 cup corn syrup
- 1 tsp vanilla extract
- 1/2 tsp baking soda
Instructions
- Preheat oven to 250 degrees.
- Line a large sheet pan or foil pan(s) with parchment. Use a pan that has 1 – 2 inch sides.
- In a 6 quart pot, heat oil and popcorn kernels over medium-high heat and cover with lid.
- Lift and shake when popping, when you hear the popping slow remove from heat.
- Transfer the popcorn to the parchment lined pan(s), place popcorn in oven to keep warm.
- In a medium saucepan, heat butter, brown sugar and corn syrup stirring constantly until mixture is brought to a boil.
- Let mixture boil without stirring for 5 minutes.
- Remove from heat and stir in vanilla and baking soda.
- Remove popcorn from oven and pour caramel over popcorn and gently toss to coat.
- Bake in oven for 45 minutes, gently toss halfway through.
- Remove from oven and let cool before breaking apart.
- Store in an airtight container.
