Limoncello Squares

If you love lemon, you will love these Limoncello Squares! These chewy, sweet and tart treats are easy to make and will be a great addition to any gathering or celebration!

Ingredients Needed For Limoncello Squares:

  • Baking Mix (such as Bisquick)
  • Salted Butter
  • Confectioners Sugar
  • Granulated Sugar
  • Large Eggs
  • Limoncello
  • Lemon Zest

How to Make Limoncello Squares:

These little squares are made in three easy steps. They are meant to be small and dainty but you could easily cut them larger if desired. Ok, let’s get started. Preheat oven to 350 degrees.

In a medium mixing bowl, add one cup of the baking mix and confectioners sugar. Cut the cold butter into the dry ingredients and then press into an 8 x 8 square baking dish. Bake for 10 minutes or until light brown.

Now, in the same bowl, mix the granulated sugar, tablespoon of the baking mix, eggs, limoncello and lemon zest (about 2 teaspoons). Pour mixture on top of the warm crust and bake for 25 minutes or until set.

After 25 minutes, remove from oven and run a knife around the edges to loosen the square. In a small bowl, whisk together the confectioners sugar and limoncello to make a glaze.

Gently spread glaze while still warm and let cool. The glaze will be light, but be sure to cover the entire square. Let set and cool.

Once cool, cut into 64 squares. Refrigerate or freeze in an airtight container.

Ingredients

Crust

  • 1 cup baking mix (such as Bisquick)
  • 2 tbsp confectioners sugar
  • 2 tbsp salted butter, cold

Filling

  • 3/4 cup granulated sugar
  • 1 tbsp baking mix
  • 2 large eggs
  • 2 tbsp limoncello
  • 1 lemon, zested

Glaze

  • 1/2 cup confectioners sugar
  • 1 1/2 tbsp limoncello

Instructions

Crust

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, cut cold butter into baking mix and powdered sugar.
  3. Press into 8 x 8 square baking dish.
  4. Bake for 10 minutes or until golden brown.

Filling

  1. In the same bowl, beat together the granulated sugar, baking mix, eggs, limoncello and lemon zest.
  2. Pour over crust and bake for 25 minutes.
  3. Remove from oven and run a knife around the edges to loosen.

Glaze

  1. In a small bowl, whisk the powdered sugar and limoncello until smooth.
  2. Spread evenly on top of the squares and let set.
  3. Cut into 64 squares.
  4. Freeze or refrigerate in an airtight container.
  5. Enjoy!
