This Mozzarella and Olive Soda Bread is perfect with soups and pastas. Soda Bread is perfect for those short on time, it comes together in minutes and doesn’t require any rise time. Just mix and bake!

- All-Purpose Flour
- Buttermilk
- Baking Soda
- Salt
- Shredded Mozzarella
- Black Olives
- Green Olives
- Fresh Rosemary

How to Make Mozzarella and Olive Soda Bread:
Pre-heat your oven to 450 degrees and line a sheet pan with parchment paper. Make sure you arrange the racks in your oven so that you can place the bread in the middle.
In a large bowl, sift the flour, baking soda and salt together. Add the chopped olives, shredded mozzarella and fresh rosemary. The rosemary can be optional if you are unable to find it. You can also use just black olives or just green olives or mix and match.
Stir to incorporate the cheese, olives and rosemary into the flour mixture. Then, create a well in the middle of the mixture and pour in the buttermilk. Use a spoon to mix until the dough holds together. The dough will be sticky.
Sprinkle the parchment on the sheet pan with flour and transfer the dough onto the floured surface. Lightly flour the top and knead into a 6 inch round loaf. Using a sharp knife or pastry cutter, cut a deep cross into the loaf.
Bake for 15 minutes at 450 degrees on a rack in the middle of the oven. Then lower the temperature to 400 and bake for 20 minutes. Let cool for 15 – 20 minutes on a wire rack before slicing.

- 1 1/2 cups buttermilk
- 1 tsp baking soda
- 1 tsp salt
- 1 cup mozzarella, shredded
- 1/2 cup black olives, chopped
- 1/2 cup green olives, chopped
- 1 tbsp fresh rosemary, chopped
Instructions
- Pre-heat oven to 450 degrees and line a sheet pan with parchment.

- Create a well in the middle of flour and cheese mixture, pour in the buttermilk.
- Mix with a spoon until all the buttermilk is incorporated and the dough sticks together.
- Flour the parchment in the sheet pan and transfer dough.
- Sprinkle a little flour on top and lightly knead into a round loaf. About 6 inches wide.
- Cut a deep cross into the top of the loaf with a sharp knife or pastry cutter.
- Bake for 15 minutes on a rack in the middle of the oven, then drop to 400 degrees and bake for another 20 minutes.
- Cool for 15 – 20 minutes on a wire rack before cutting.
