Mozzarella and Olive Soda Bread

Ingredients

  • 2 2/3 cups all-purpose flour
  • 1 1/2 cups buttermilk
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup mozzarella, shredded
  • 1/2 cup black olives, chopped
  • 1/2 cup green olives, chopped
  • 1 tbsp fresh rosemary, chopped

Instructions

  1. Pre-heat oven to 450 degrees and line a sheet pan with parchment.
  2. In a large bowl, sift together the flour, baking soda and salt.
  3. Mix in cheese, olives and rosemary.
  4. Create a well in the middle of flour and cheese mixture, pour in the buttermilk.
  5. Mix with a spoon until all the buttermilk is incorporated and the dough sticks together.
  6. Flour the parchment in the sheet pan and transfer dough.
  7. Sprinkle a little flour on top and lightly knead into a round loaf. About 6 inches wide.
  8. Cut a deep cross into the top of the loaf with a sharp knife or pastry cutter.
  9. Bake for 15 minutes on a rack in the middle of the oven, then drop to 400 degrees and bake for another 20 minutes.
  10. Cool for 15 – 20 minutes on a wire rack before cutting.
