This One Pot Mushroom Stroganoff is an easy and tasty weeknight dinner! Made in one pot and ready in less than an hour, this meatless dish is perfect for when you are pressed for time!

- olive oil
- shallot
- garlic cloves
- cremini or baby bella mushrooms
- portobello caps
- egg noodles
- beef broth or beef stock (or vegetable stock)
- sour cream
- sea salt
- black pepper

How To Make One Pot Mushroom Stroganoff
This stroganoff is perfect for the mushroom lover! It’s creamy and flavorful, plus, its so easy to make! In a large skillet, heat olive oil over medium-high heat. I used a skillet with a lid but its not necessary, it would help the noodles to cook a little faster. Then add chopped shallot and minced garlic.
Stir and cook until the mushrooms have cooked down. Then add the beef broth or beef stock and package of egg noodles and stir. You can also use vegetable stock.
If your skillet has a lid, cover and let simmer for about 10 minutes, stirring occasionally. If you don’t have lid, you may need to simmer longer. Stir in sour cream, cover and simmer for another 5 -10 minutes or until noodles are cooked. Season with sea salt and black pepper.
If desired, garnish your with grated cheese. Serve immediately!

- 8 oz cremini or baby bella mushrooms, sliced

- 16 oz egg noodles
- 32 oz beef broth or beef stock (or vegetable stock)
- 4 oz sour cream
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Heat olive oil in large skillet over medium-high heat.
- Add shallots and minced garlic and cook for 2 – 3 minutes until fragrant.
- Add mushrooms and cook until mushrooms have cooked down about 5 mins.
- Add egg noodles and beef stock, cover and let simmer for 10 minutes, stirring occasionally.
- Stir in sour cream and cover for another 5 minutes or until egg noodles are cooked.
- Season with sea salt and black pepper.
- Garnish with grated cheese if desired.
- Serve immediately!
