This One Pot Spinach Artichoke Pasta is so creamy, cheesy and simple to make! Ready in only 30 minutes, it’s a quick, dump and go dinner! If desired, add a protein, such as chicken!

- olive oil
- garlic cloves
- alfredo sauce
- chicken stock or vegetable stock
- italian seasoning
- penne or your favorite pasta
- marinated artichokes, quartered, chopped
- fresh baby spinach
- shredded Italian cheese blend

How To Make One Pot Spinach Artichoke Pasta
In the true spirit of a one pot meal, this dish is so easy to make! Heat a large skillet over medium heat and add the olive oil and minced garlic. I use a skillet with a lid, but if you don’t have one, use a lid from a large stock pot.
Cook the garlic in the olive oil for just a few minutes, until fragrant, being careful not to burn. Then pour in the alfredo sauce and chicken stock or vegetable stock, stir. Then stir in the italian seasoning.
Add the uncooked pasta and marinated artichokes, stir. Then reduce to low or simmer and cover for 15 minutes or until the pasta is cooked.
After 15 minutes, stir in the fresh baby spinach. You may have to do this in batches. It may seem like a lot of spinach, but trust me, it will wilt down! Lastly, stir in the shredded cheese.

Ingredients
- 2 tbsp olive oil
- 2–3 garlic cloves, minced
- 1 jar (15 oz) alfredo sauce
- 2 cups chicken stock
- 1/2 tsp italian seasoning
- 8 oz penne or your favorite pasta
- 12 oz jar marinated artichokes, quartered, chopped
- 8 oz fresh baby spinach
- 1 cup shredded Italian cheese blend
Instructions
- In a large skillet, heat olive oil and minced garlic over medium heat until fragrant, be careful not to burn the garlic.
- Add the chicken stock, alfredo sauce, italian seasoning and stir.
- Then add in the pasta and artichokes, stir.
- Reduce temperature to low or simmer and cover pan with a lid for 15 minutes.
- After 15 minutes, stir in the baby spinach (may need to do this in batches).
- Lastly, stir in the shredded cheese.
- Serve immediately.
