Ooey Gooey Pumpkin Bars

These Ooey Gooey Pumpkin bars are a delicious twist on the popular cookie. Serve with whipped topping or a scoop of vanilla ice cream, and you have the perfect dessert for tailgate party or holiday potluck!

Ingredients Needed For Ooey Gooey Pumpkin Bars

Cake Mix Layer

  • yellow cake mix
  • large egg
  • salted butter

Pumpkin Layer

  • cream cheese
  • pumpkin puree
  • large eggs
  • vanilla extract
  • pumpkin pie spice
  • salted butter
  • confectioners sugar

How To Make Ooey Gooey Pumpkin Bars

Pre-heat oven 350 degrees. In a large mixing bowl, add cake mix, 1 egg and 1 stick of melted butter.

Mix by hand with a wooden spoon until combined and smooth.

Lightly grease a 13 x 9  pan with cooking spray. Spread mixture evenly on bottom of dish and set aside.

In a large bowl, add cream cheese and pumpkin and beat with a hand mixer until combined. Beat in remaining eggs, vanilla, pumpkin pie spice and other stick of melted butter.

Lastly, mix in the confectioners sugar. Scrap sides to make sure batter is completely mixed, the mixture should be smooth.

Pour pumpkin mixture on top of cake batter in pan. Bake at 350 degrees for 40 – 45 minutes. I baked for 40 minutes, but every oven in different. The pumpkin should look set. Cool completely and cut in bars. Refrigerate or freeze in an airtight container.

Cake Mix Layer

  • 1 box yellow cake mix
  • 1 large egg
  • 1/2 cup salted butter, melted, cooled slightly

Pumpkin Layer

  • 8 oz cream cheese, softened
  • 15 oz pumpkin puree
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3 tsp pumpkin pie spice
  • 1/2 cup salted butter, melted, cooled slightly
  • 2 cups confectioners sugar

Instructions

  1. Preheat oven 350 degrees and lightly grease a 13 x 9 pan.

Pumpkin Layer

  1. In a large bowl, add cream cheese and pumpkin. Beat until combined.
  2. Add eggs, vanilla, pumpkin pie spice and stick of melted butter. Beat until combined.
  3. Add confectioners sugar and beat until smooth.
  4. Pour mixture on top of cake layer in pan.
  5. Bake 40 – 45 minutes.
  6. Cool completely.
  7. Serve with whipped topping or ice cream. Enjoy!
